Fish will keep you looking young /or feeling young

Baked salmon with maple orange garlic glaze will taste wonderful too!

This recipe gives you a break, the salmon marinates in the glaze, and you can hang out with your guests while it marinates for 30 to 45 minutes




Tools:

shallow baking dish, glass

Baking sheet

Olive oil cooking spray or bottled oil

aluminum foil

small bowl

whisk or eggbeater

garlic crusher

marinade brush

fork

fish platter


Ingredients:

1 1/2 lbs salmon fillets

2/3 cup of orange marmalade

1/3 cup Vermont Maple Syrup

2 crushed garlic cloves

1 bunch of scallions, fresh

1 cup of white jasmine rice cooked


If you are using a microwave

sea salt 1 tablespoon

ground black pepper 1-2 tablespoons

optional: 1/8 cup of low sodium chicken broth

Instructions:

Place salmon fillets in the shallow baking dish.

Grab a small bowl and combine maple syrup, orange marmalade and crushed garlic

use a whisk or beat with an eggbeater on low until blended

Pour mixture over salmon

Cover and refrigerate for 30 to 45 minutes


Preheat oven to 375 degrees F

Spray the baking sheet or rub it with olive oil

Remove fish from marinade & place skin side down on the baking sheet

Bake for 14–18 minutes, basting occasionally with the marinade

Salmon is done when it flakes easily with a fork

Arrange fish on rice, on a platter and top with freshly cut scallions


If you are using a microwave

Drizzle the fillets with olive oil and season with sea salt and pepper - rub into the flesh

Place in a microwave safe dish

Add 1/8 cup of low sodium chicken soup to the dish

top with 1–2 pats of real butter

Cover and microwave on high for 3 minutes

Open carefully and serve on rice with cut scallions


If you want to pan fry,grill,or broil

Pan Fry

Heat the skillet without oil. The skillet is ready when a drop of water dances across the pan , so wet your hand and fling it toward the pan.

Season the fish with the sea salt and pepper. Add a small amount of olive oil to a

hot skillet, add the fish to the skillet and cook for 4–5 minutes on each side or until the fish flakes easily. Serves on rice with cut scallions.


Grill

Heat grill to high. Cut aluminum foil large enough to completely enclose fish. Drizzle or spray olive oil on foil. Add salt & pepper and low sodium chicken to the foil. Place fillets into the foil and seal the foil edges, then place on the grill. Cook for 10 minutes and check for doneness or cook for 15 minutes . Doneness is when fish flakes easily.

Serve on rice with cut scallions.


Broil

Season fish with olive oil , salt and pepper. Place the fish on a baking sheet and broil on high for 8 to 10 minutes. DO NOT OVERCOOK. Serve on rice with cut scallions.


Air Fryer

Set air fryer to 375 degrees F

Spray the air fryer grid plate with olive oil

or lightly coat the air fryer grid plate with oil from the bottle poured onto the brush

Remove fish from marinade & place skin side down on the grid plate

Bake for 8–10 minutes, then check for doneness with a fork.

Salmon is done when it flakes easily with a fork. If it needs more cooking time, marinate fillets and cook for 4 more minutes MAX.

Arrange fish on rice on a platter and top with freshly cut scallions
